As per ayurvedic scriptures, Ash gourd is one of the most effective fruit to get rid of several gut-related ailments, and it is advisable to incorporate it into your diet. Ash gourd has a cooling effect; it is good to consume ash gourd juice empty in the morning to relieve acidity. It has a soothing effect on nerves. It keeps intestinal parasites at bay, is a natural liver detoxifier, maintains weight, and is suitable for diabetic patients. Although, due to its cooling effect, summers are much more appropriate to have it. I made this summer salad with red lentil (masoor) sprouts, brown rice, red bell pepper, and pomegranates topped with raisins and sunflower seeds. Red lentil sprout is rich in Iron, folate, and increased bioavailability of Vitamin B and Vitamin C. If you want to make this nutritious salad for breakfast, you have to plan as you have to make/buy sprouts in advance. Boiling brown rice is easy as it gets cooked quickly; you can chop veggies and prepare them for salad.

Serves - (2-3)
Ingredients:
Ash gourd- 1 cup (chopped)
Brown rice -cooked (1/2 cup)
Red lentil sprouts – ½ cup
Red bell pepper – ½ cup (chopped)
Raisins- 1tbsp
Sunflower seeds- 1 tbsp (toasted)
Pomegranates- ½ cup
Lemon/ lime juice- 1 tbsp.
Black pepper – 3-4 (freshly crushed)
Honey – 1 tbsp. (optional)
Cilantro - 1 tbsp. (chopped)
Directions:
1. Take a big bowl, mix all ingredients, and enjoy.
