Daal with Greens/Herbs

Cooking daal with greens is the easy and quick way to have a daily dose of legumes and greens. You can choose any lentil or green, and you will never go wrong with the recipe. If you love cooking, you can elaborate on cooking by adding different veggies, onion, and tomatoes. But, if you are a busy bee and just looking to fix a healthy meal, this recipe is definitely for you. Moreover, you need not be very specific about the ratio of lentils and greens. It is always a good idea to soak lentils ahead of time, especially if you get bloated quickly. Anyway, soaking lentils for 1-2 hours will make you absorb nutrients more efficiently and remove antinutrients like phytates. Greens like spinach, arugula, kale, collard, or combination of two greens is a good choice. For this Recipe I am using spinach and kale together. Similarly, you can use herbs to your daal to make it nutritious and delicious. I love to add dill to my daal. Dill is rich in calcium, good for the digestive system, and gives a beautiful flavor when cooked with lentils. I cook dill with red lentil. Cooking red lentil with dill gives this creamy dahl a lovely flavor.


Daal with spinach and kale


Preparation time: 10 mins

cook time: 20 mins

Total time: 30 mins

Serves: 3- 4



Ingredients:


Pigeon pea ( toor daal) – 1 cup (dry)

Spinach – 2 cups ( chopped)

Garam masala – ½ tsp ( optional)

Cumin seeds – ½ tsp

Turmeric – 1 tsp

Salt – as per taste

Water


Directions:

  1. Soak the Lentil water for 1-2 hours.

  2. Drain out the water, wash the lentil, and put them in a pressure cooker with about 2-3 cups of water.

  3. Add chopped spinach, turmeric, salt, and water. Let The lentil cooks for a 3-4 whistle.

  4. Adjust the consistency of daal.

  5. Add garam masala. Simmer for two more minutes

  6. Enjoy with white or brown rice.

Daal with Dill leaves



Preparation time: 30 mins

cook time:15 mins

Total time: 45 mins

Serves: 3


Ingredients:


Red lentil – 1 cup

Dill leaves – 1/2 cup ( chopped)

Cumin seeds – 1 tsp

Turmeric – 1/2 tsp

Salt – as per taste

Water- 2-3 cups

Directions:

  1. Soak lentil for 30 mins

  2. Drain out the water

  3. Take a heavy bottom pot. Add cumin seeds and dry roast it.

  4. Add soaked lentil, water, salt, turmeric.

  5. Let it simmer for 15 mins.

  6. Add dill leaves. Let it simmer till it is done.

  7. Enjoy with Brown/ white rice.
