Mangoes: Ripe mangoes give this nice cream its naturally sweet and fruity flavor. Rich in vitamin C, mangoes support immune function and promote healthy skin through collagen production. They are also a great source of vitamin A, essential for eye health. The fiber in mangoes aids digestion and supports a healthy gut microbiome, making them an excellent addition to plant-forward diets. The antioxidants in mangoes—especially beta-carotene and polyphenols—help reduce inflammation and oxidative stress in the body.

Coconut Milk: Coconut milk adds richness and creaminess to the ice cream, eliminating the need for dairy. Full-fat coconut milk contains medium-chain triglycerides (MCTs), fats that are more easily metabolized by the body for quick energy.

Maple Syrup: In moderation, maple syrup is a natural sweetener containing trace minerals such as manganese and zinc, which support metabolic and immune functions.

Ingredients


Mango Coco Nice cream 

  • 2 ripe mangoes (peeled, chopped – about 2 cups)

  • 1½ cups or one can (13.5 oz) full-fat coconut milk

  • 1 to 2 Tbs maple syrup (adjust to taste)

  • 1 Tsp fresh ginger juice (start with ½ tsp if you're unsure)

  • 2 Tsp lemon juice

  • 1 Tsp vanilla extract (optional)

  • Pinch of salt (brings out all the flavors)

  • ½ cup chopped mango pieces (optional)


 Directions

  1. Blend the base:

    Combine the chopped mango, coconut milk, maple syrup, ginger juice, lemon juice, vanilla (if using), and salt in a blender. Blend until smooth and creamy.

  2. Taste & adjust:

    Taste the mixture. If you want more sweetness or a bolder ginger kick, add more syrup or ginger juice and blend again.

  3. Chill the mix and churn it again:

    For best results, refrigerate the mixture for 3-4 hours. Then, take it out and churn it again. Add mango chunks and pour the mixture into the mold.

  4. Freeze until firm:

    Let it firm up fully in the freezer for 4–6 hours.

  5. Serve:

    Demold the ice cream and enjoy!
