Sweet Potato Toast

Ingredients

Sweet potato (white/orange)– 1 large (Sliced lengthwise)

Oil – 1 Tbsp for toasting

Sweet Toppings (per slice)

Peanut/almond butter- 1tbsp per toast

Banana – ½ banana per toast

Berry of choice- (blueberry/ raspberry/ strawberry) 4 per toast

Hemp seed – 1 tsp per toast

Maple syrup/ honey – Optional

Savory Toppings (per slice)

Hummus – 1 Tbsp/toast (I have used black chickpea hummus)

Avocado –  sliced

Arugula/greens or micro greens of your choice

Cherry tomatoes

Olive oil

Salt

Pepper

Directions

  1. Wash and cut the sweet potato into ¼-inch thick slices (lengthwise).

  2. Brush the slices with olive oil.

3. Grill or toast the sweet potato slices for 5-7 minutes or until tender and golden brown. Check if the slices are cooked or not with a fork.

4 . Assemble Your Toast.

Sweet Version:

  • Spread peanut butter on each toast slice.

  • Top with sliced banana and berries.

  • Drizzle with maple syrup or honey (optional).

  • Sprinkle with hemp seeds.

Savory Version:

  • Spread hummus on each toast slice.

  • Top with avocado slices, arugula/microgreens, and cherry tomatoes.

  • Drizzle with olive oil, salt, and pepper to taste.
