Ingredients
Sweet potato – 1 boiled
Buckwheat flour- 1 cup
Cocoa powder- ¼ th cup
Unsweetened soy milk- 1/3 cup
(Or any plant-based milk)
Semi-sweet chocolate chip- ¼ cup
Maple syrup- ½ cup
Peanut butter- 2 Tbsp
Baking powder- ½ tsp
Salt – ¼ tsp

Directions
1. Mash boiled sweet potato and mix all the ingredients except chocolate chips in a large bowl or cake mixer. Then, add half of the chocolate chips to the batter and mix well.


2. Preheat the oven to 325°F, and line a brownie pan with parchment paper. Transfer the batter to the pan and spread it evenly.


3. Bake the brownies for 30 minutes and let them cool completely before slicing.
